Freezing Homemade Pie Crusts

Tammy at Tammy's Recipes has started a new link carnival, Kitchen Tip Tuesdays. At first I was a bit nervous about joining in because I don't have any fancy tips to share but after reading all the other handy tips people have shared I decided I wanted to play too! So, here's my first tip!
My favorite pie crust recipe makes 5 crusts. In the past I've always kept any extras in the refrigerator and usually ended up tossing them if I didn't come up with a use before they dried out. Well, my mom visited me last September (when Helen was born) and suggested I try freezing the extra crusts for later use. What a fantastic suggestion! The crusts freeze wonderfully and it is so nice to be able to pull one out and whip up a quiche or pie in no time. Now when I make a pie I separate the 5 crusts into balls and individually wrap the ones I don't use. Actually, I double wrap, first in a layer of plastic wrap and then in a freezer bag. When I want to use one of the crusts I just pull it out of the freezer in the morning and it is ready to roll out by the afternoon. It is such a time -saver and less wasteful than my old method! So, that's my first tip, hope it helps you out too!
By the way, here's my favorite crust recipe....it results in tasty, flaky crusts!
No-Fail 5 Crust Pie Crust
5 cups flour
2 cups shortening or lard
2 tsp salt
Cut in pea-sized pieces. In a one cup measuring cup put:
1 egg
1 TB vinegar
Fill with water to one cup level. Mix liquid into flour; divide into five balls equally and roll out or freeze.

Kristin, thanks for participating, and for the great instructions! :) I think my main problem with freezing pie dough is that I was freezing mine in one huge lump instead of in one-pie-size balls. :) Next time I will do it your way! I love quiche, but making crust from scratch at the last minute makes it a more time-intensive meal. :)
I'm proud of my pie crusts! But I'll have to try this recipe. The freezing doesn't make them turn out tough?

I roll out each of the pie crusts, place wax paper between them (or use old cereal bags) and freeze the pie crusts flat. Place between 2 sheets of cardboard and freeze.
